Supper’s ready!

In my seemingly endless quest to eat healthier, this morning I prepared supper for the week. My feline boys seemed surprised watching their human cooking. I was a bit surprised myself, in part because the dish actually turned out. So what’s for supper this week? Fried rice with some salad shrimp thrown in for extra protein. I expect it will taste better as the week progresses and all the ingredients blend together. The recipe was pretty easy although I did not shred the carrots and used a purple onion instead of scallions. As I am not an owner of a food processor, I started shredding the carrots by hand, but it was taking so long I just dumped the carrots into a manual chopping device and starting pushing the device’s chopping thingy down. Voila! Chopped carrots! Who needs shredded carrots? As for the scallions, I could not find them at the market. But aren’t purple onions and scallions in the onion family? Too late now. Not too bad if I do say so myself.
